What is this humble-looking wee thing, you ask? It is friggin' delicious, that's what!! My friend April came up with this one* and begged me to try it. I wasn't sold on the description, but I tried it anyway and -- wow -- it is deeeeelicious!
All you do is take your regular stuffing recipe and add cooked beans (I suggest black or white beans). Then you roll the stuffing into balls and wrap them in rice paper wraps (soak the wraps in warm water first), arrange them on a greased baking tray, and bake as usual (I baked them for 20 minutes in a preheated 200°C oven). Brush the tops with olive oil before baking if you like but totally not necessary.
Even if you think this idea is mental, you really ought to try it -- especially if you are mad about stuffing. And even if you don't want to try it in the rice wraps (you're a fool!), you should try mixing black or white beans into your stuffing. It bulks it up and adds protein without really changing the taste -- so you have stuffing that's a little healthier and just as delicious.
